Production disciplinary of the controlled and guaranteed denomination of origin of the wine
Nobile di Montepulciano wine

Article 1
The controlled and guaranteed denomination of origin Vino Nobile di Montepulciano is reserved for red and red reserve wines that meet the conditions and requirements established in this production specification.

Article 2
The wine with controlled and guaranteed denomination of origin Vino Nobile di Montepulciano must be obtained from the vineyards having, within the company, the following ampelographic composition:
- Sangiovese (called Montepulciano kind blackthorn): minimum 70%.
The black canaiolo can contribute up to a maximum of 20%, the recommended and / or authorized vines for the province of Siena can also contribute up to a maximum of 20% provided that the percentage of white grape varieties does not exceed 10% .
Aromatic vines are excluded with the exception of Malvasia del Chianti.
It is allowed that the vineyards, with the ampelographic composition indicated above, entered in the Register of controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" are also registered in the Register of controlled denomination of origin wine vineyards "Rosso di Montepulciano ".

Article 3
The grape production area falls within the administrative territory of the municipality of Montepulciano, in the province of Siena, limited to the area suitable for supplying productions that meet the requirements set out in this specification.
This area includes:
part of the territory of the municipality of Montepulciano delimited by a line that, starting from the intersection of the Siena-Chiusi railway line with the municipal border of Montepulciano near the Confine estate, follows the border of Montepulciano continuously until it reaches the aforementioned railway north of the railway station in Montallese.
This border then follows the aforementioned railway line to the starting point:
part of the territory of the municipality of Montepulciano - fraction Valiano, delimited by a line which, starting from the point where the municipal border intersects the Chianacce road at an altitude of 251, runs, proceeding in a clockwise direction, the aforementioned municipal border until it meets the road Marshes at an altitude of 253; then follows the aforementioned road until the junction with the local road of the Fornaci with which it identifies up to the graft with the Lauretana road for Valiano; it runs westwards, for a short stretch, reaches the Chianacce road, which it follows until it joins the starting point.

Article 4
The environmental and cultivation conditions of the vineyards destined for the production of the wine with controlled and guaranteed denomination of origin Vino Nobile di Montepulciano must be the normal ones of the area and in any case suitable to give the grapes and the wine derived the specific quality characteristics.
Therefore, only well-exposed vineyards located at an altitude between 250 and 600 meters above sea level are suitable.
The planting layouts, the training systems and the pruning systems must be those generally used and in any case suitable for not changing the peculiar characteristics of the grapes and the wine. Any forcing practice is prohibited. Rescue irrigation is allowed.
For new plants and replantings of vineyards suitable for the production of controlled and guaranteed designation of origin wine Vino Nobile di Montepulciano, starting from the year following the entry into force of this specification, the minimum density per hectare must be 3330 vines.
The yield of grapes allowed for the production of wine with a controlled and guaranteed designation of origin Vino Nobile di Montepulciano must not exceed t. 8 per hectare of specialized crops.
For promiscuous cultivated vineyards, the maximum production of grapes per hectare must be compared to the area actually used by the vine.
At this limit, even in exceptionally favorable years, the yield must be brought back to the limit indicated above, provided that the production does not exceed the limit by 20%.
The grapes destined for winemaking must ensure the wine with a controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" a minimum natural alcoholic strength by volume of 12%.
In winemaking only loyal and constant oenological practices are allowed, capable of giving the wine its peculiar characteristics.
The Tuscany region with its own decree, after hearing the relevant trade organizations, each year before the harvest can establish a maximum limit of grape production per hectare lower than that set by this specification, immediately informing the Ministry for Agricultural Policies - National Committee for the protection and enhancement of denominations of origin and typical geographical indications of wines.

Article 5
The winemaking and mandatory aging operations must be carried out within the territory of the municipality of Montepulciano.
However, vinification and aging outside the production area are authorized for companies that: have, at least as from the entry into force of the decree of the President of the Republic 1 July 1980, the wine-making structures near the municipal border of Montepulciano and in any case distance not exceeding
m. 2,000 as the crow flies and that have the vineyards from which the grapes come, registered for at least five years, starting from the publication of the decree of 1 July 1996 (modification of the disciplinary for the production of Vino Nobile di Montepulciano) in the DOCG wine register "Vino Nobile di Montepulciano".
The maximum yield of grapes in wine must not exceed 70%. If the yield exceeds this limit, but not 75%, the surplus is not entitled to the denomination of controlled and guaranteed origin.
Over 75% of the right to the controlled and guaranteed designation of origin for the entire product lapses.
The wine with controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" must undergo a maturation period of at least two years, starting from 1 January following the harvest.
Within this period, the following possible options are left to the discretion of the manufacturers:
1) 24 months of aging in wood;
2) minimum 18 months of aging in wood plus the remaining months in another container;
3) 12 months minimum in wood plus 6 months minimum in bottle plus the remaining months in another container.
In cases 2 and 3, the start of the maturation period in wood cannot be extended beyond April 30 of the year following the harvest.
The dates of the beginning and end of the maturation period in wooden containers must be documented with relevant notes on the cellar records.
The maturing product in wooden containers can be temporarily transferred to other containers after annotation in the cellar records and with the obligation to respect the minimum period of storage in wood.
The wine with controlled and guaranteed denomination of origin Vino Nobile di Montepulciano cannot be released for consumption before the completion of the two years of compulsory maturation calculated from 1 January of the year following that of grape production.
The wine with controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" deriving from grapes having a minimum natural alcoholic strength by volume of 12.50% and subjected to a maturation period of at least three years, one of which is bottle refinement, can carry the qualification "reserve" on the label, without prejudice to the minimum periods of use of the wood provided for in this article.
The dates of the beginning and end of the maturation period in wooden containers, as provided in this article, and refinement in the bottle must be documented with relevant notes on the cellar records.
The maturation period also for the "reserve" type is calculated starting from 1 January of the year following that of grape production.
Without prejudice to aging in wooden containers, 4% of the same wine can be kept in different containers to be used for overfilling.
It is allowed, for improvement purposes, to add up to 15% of different vintages of wine with controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" or wine suitable for the denomination of controlled and guaranteed origin "Vino Nobile di Montepulciano ".
Upon notification to the chamber of commerce and the central inspectorate for the suppression of food fraud to be presented, by the winemaker, it is allowed within the 16th month starting from 1st January following the harvest, that the wine suitable for be designated with the denomination of controlled and guaranteed origin "Vino Nobile di Montepulciano" is reclassified to the denomination of controlled origin "Rosso di Montepulciano" as long as it corresponds to the conditions and requirements established by the relative production disciplinary. However, if batches of the controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" are transferred by the producer after the above mentioned term, the established denomination must be maintained irreversibly, except for loss of characteristics.
Bottling operations must be carried out within the winemaking area.
However, for the controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" not entitled to the mention "reserve", on request to be made to the Ministry for agricultural policies - National Committee for the protection and enhancement of the denomination of origin and of the typical geographical indications of the wines, the bottling of the wine with controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" in the whole territory of the Tuscany region to the cellars that bottle the wine with denomination of controlled and guaranteed origin "Vino Nobile di Montepulciano ”for at least three years prior to the entry into force of this production specification.

Article 6
The wine with controlled and guaranteed designation of origin Vino Nobile di Montepulciano when released for consumption must meet the following characteristics:
color: ruby ​​tending to garnet with aging;
smell: intense, ethereal, characteristic perfume;
flavor: dry, balanced and persistent, with possible hints of wood;
minimum total alcoholic strength by volume: 12.50% vol, for the "reserve" type 13.00% vol;
minimum total acidity: 4.5 g / l;
minimum net dry extract: 23 g / l.
The Ministry for Agricultural Policies - the National Committee for the Protection and Enhancement of Designations of Origin and Typical Geographical Indications of Wines - has the faculty to modify the limits of total acidity and net dry extract with its own decree.

Article 7
In the labeling and designation of the controlled and guaranteed denomination of origin "Vino Nobile di Montepulciano" it is forbidden to add any qualification other than those provided for in this specification, including the adjectives "fine", "chosen", "selected" and similar . However, the use of indications that refer to names, company names, private brands, which do not have a laudatory meaning and are such as not to mislead the consumer and other optional terms in compliance with current regulations is permitted. The same, excluding the brands and company names, are shown on the labeling only in typographic characters no larger and more evident than those used for the designation of origin of the wine, except for the more restrictive general rules.
The use of additional geographical mentions is also allowed, as well as the use of the term vineyard accompanied by the relative toponym according to the general conditions of use of the toponyms and in compliance with the administrative procedures that provide for a specific registration in the register of vineyards, a specific complaint annual of the grapes and a specific taking in charge in the obligatory cellar records. The bottles containing the wine with controlled and guaranteed designation of origin "Vino Nobile di Montepulciano" must always include an indication of the year of production of the grapes.
The sampling of the batches of "Vino Nobile di Montepulciano" for the purpose of carrying out the analytical and organoleptic tests, before being released for consumption, must be carried out within the vinification area and, if necessary, repeated if the bottling does not take place within the next ninety days.

Article 8.
The wine with controlled and guaranteed denomination of origin Vino Nobile di Montepulciano must be released for use only in glass bottles with a capacity not exceeding 5 liters.
The bottles must be of the Bordeaux type, of dark glass and closed with a cork close to the mouth.
The packaging and dressing of bottles is forbidden in any case not suited to the prestige of the wine.
